Dr. Siti Fairuz Binti Che Othman is an Assistant Professor at the Department of Biotechnology, Kulliyyah of Science, International Islamic University Malaysia (IIUM), specializing in food science, functional foods, nutraceuticals, natural product chemistry and biostatistics. She holds a Ph.D. in Food Science and Nutrition from the University of Leeds, United Kingdom (2017) and has over 15 years of academic experience, teaching courses such as Biological Science (Kolej Shahputra), Analytical Methods for Functional Foods and Nutraceuticals, Chemistry and Biochemistry of Natural Products, Food Chemistry, Food Process Engineering, and Research Methodology (IIUM). 

Her research focus on hydrogels application and encapsulation techniques of bioactive compounds used in various fields that includes the food, pharmaceutical, aquaculture and ago based industries. She has led and contributed to multiple funded projects, including the development of alginate beads for probiotic encapsulation, hydrogel-nanoparticle hybrids for oral cancer therapy, and chitosan-enhanced wound dressing technologies, securing over RM 286,000 in research funding both as Principal Investigator and Co-investigator. Dr. Siti Fairuz has authored numerous peer-reviewed articles indexed in SCOPUS and Web of Science. Her work has earned her several awards, including a Gold Medal at the International Innovation Awards, Malaysia Technology Expo 2021, and a Silver Medal at the 4th International Malaysia-Indonesia-Thailand Symposium on Innovation and Creativity and Silver award at IRID 2022. In addition to her scholarly contributions, she actively engages in community service, environmental awareness initiatives, and scientific outreach through events such as marine debris monitoring, international conferences, and editorial publications. She also successfully filed coyrights for two works and one on-going patent application.
