Expert Profile
Dr Ibrahim bin Abu Bakar began his professional career in 1995 as an Assistant Researcher at Universiti Kebangsaan Malaysia (UKM) and the Palm Oil Research Institute of Malaysia (PORIM). Prior to joining International Islamic University Malaysia in 2005, he served the Ministry of Health Malaysia for ten years as a Food Technologist, where he was actively involved in food safety and public health initiatives. Currently, Dr Ibrahim is an Associate Professor at the Department of Nutrition Sciences, Kulliyyah of Allied Health Sciences, IIUM Kuantan. His academic expertise focuses on halal food innovation, food safety, nutrition sciences, and Islamic perspectives on food practices. In the area of research and innovation, Dr Ibrahim has been actively involved in developing novel halal food ingredients and alternative food products. Among his notable innovations is the development of a plant-based halal burger using young jackfruit as a substitute for animal protein, which integrates vegetable protein and dietary fibre as a healthier and sustainable food alternative. This innovation received a Gold Medal at the International Invention, Innovation and Technology Exhibition (ITEX) 2013, and he was later honoured with the “Anugerah Usahawan Penyelidik” by the Ministry of Science, Technology and Innovation (MOSTI) in 2021. His research interests also include food safety, halal science, consumer awareness, and Islamic jurisprudence related to food practices. Dr Ibrahim has conducted studies on nutritional and energy requirements during Islamic pilgrimage, Islamic fasting practices, prophetic traditions of food sharing (Sunnah of sharing food in a tray), and the application of the concept of Umum al-Balwa in contemporary food safety issues. His research findings have been widely disseminated through publications in both local and international academic journals. Through his academic work, research innovation, and professional engagement, Dr Ibrahim continues to contribute to the advancement of halal science, food safety, and Islamic perspectives on nutrition and food practices at both national and international levels.
